Looking forward to the week ahead! Hoping it will be low key but there's always a lot going on.
Dinner Meals Sat through Thurs:
Sat (last night) - Chili and cornbread (beef from freezer)
Sun - Beef tenderloin, asparagus, baked potato, caprese salad (beef from freezer)
Mon - leftover chili and cornbread
Tues - grilled chicken, salad, twice baked potatoes (baked potatoes left over from Sun)
Wed - Beef vegetable soup (beef from freezer) and any leftover potatoes (leftover from Tues). The soup was made Sun and we had that for lunch.
Thurs - grilled shrimp, seafood risotto, salad (seafood stock from freezer)
This will get us through Thursday. It's definitely more beef than we usually eat in a week (or two!). We ate a ton of seafood on spring break, so the beef will balance that out! I found out a lot of the stuff in the freezer is stock (seafood, chicken), so we'll continue to use that up. The good news is no eating out or takeout for dinner this week. I have a tentative lunch out on Friday with my mom friends. Other than that, I will pack my lunches for work. We are having our friends over for dinner on Friday night.
It will be a very busy work week. I've laid out my work clothes for tomorrow morning. I really need to do that every day. I usually have a vague idea of what I'm wearing, but it just creates more stress in the morning if it's not decided.

Wonderful to have a meal plan for the week based on items from the freezer. Brilliant to set out tomorrow's outfit when you anticipate a busy week. Anything that reduces stress is terrific. I want to remember to do that.
